Nitrate and Nitrite Free Pork

We have been very much enjoying adding pigs to our repetoir of animals that we are raising here on the farm. It has long been known that pork’s flavor is very dependent on what goes into the animal and the evironment that it lives in.  When an animal is raised in a clean enviroment with the ability to graze/select thier own feed, the actual products from these animals are higher in natural antioxidants and are not a natural harbour for bacteria. Producing a richer darker meat that is tastier and healthier for us. Most importanly for us, being certified organic growers, we want to make sure that the quality and love that we put into raising our pigs stays quality in the finished product. Therefore our pork contains NO Nitrates or Nitrites. For those that are unfamiliar with these nasty sounding ingredients, they are preservatives, typically put into the brine solution that goes into our smoked meat. Not only are these additives linked to cancer in the long term, they also have many short term negetive side affects like triggering asthma attacks, headaches, dizziness, and destroying red blood cells. Since we know that our pork comes from a healthy environment and healthy pigs, there is absolutly no need for these nasty invaders of our meats. We’re happy to be working with a very contientious and humane butcher, to process and package out pork under a rigorous USDA inspection so that you can be assured that this pastured pork is a real, honest, healthy part of our diets, and, we must say that it’s not just free of the bad stuff but it’s also WILDLY delicious!

This summer we will be raising our first batch of Tamworth pigs which we are really excited about. They are an old and rare breed of pig that produces exceptional meat and is knon for its marbelling effect in the darker and richer flavored meat,and especially the bacon. This breed is red in color and extremely hardy to heat and cold, they don’t get sunburns and don’t mind the winter weather we have here in New Hampshire. Tamworth’s are natural rooters, they have a long snout that is especially good for digging up grubs and stumps. We hope to raise a sow out of the bunch for us to keep on the farm and start our own selective breeding program to be able to produce an even better tasting pork that lives an even happier life!

We will be carrying select cuts at markets including, pork chops, tenderloin, ribs, and sausage. We carry a hot italian sausage and a regular breakfast sausage and were glad to be getting feedback on them recently and hearing that this sausage has changed other people’s lives too..not just ours! Ask us about reserving a half or whole pig, available a few times a year.
